Canned Jam Off

Picked 20 pounds of strawberries. Canned them up using three similar recipes. Will report on how they compare (all recipes were bring to a full rolling boil for 1 minute then can):

Recipe 1: (made 5 2/3 pint jars)
8 cups strawberries (puree)
8 cups sugar
2 T lemon juice
Box of Pectin

Recipe 2:8 cups strawberries
4 cups sugar
2 T lemon juice
Box of Pectin

Recipe 3:8 cups strawberries
2 cups sugar
2 t Stevia
2 T Lemon juice
Box of Pectin
On recipe three I forgot to put the sugar in until it was cooked. So I reheated it and put sugar in for a second round boiling for a minute. So if it doesn't set up, unfortunately I won't know if it was the stevia/sugar, or the timing of the pectin. At least I'll know how it tastes...
